Sweet confectionery with eye-catching appearance is a popular choice as a Christmas gift for many people. Instead of buying from a store, you can prepare delicious cakes yourself.
Le Thanh Thuy (Hanoi)
1. Make the cake
100 g sugar
100 g unsalted butter
30g of filtered water
20g whipping cream
250g all-purpose flour
3-5 g baking powder
Step 1: Put the ingredients of sugar, butter, salt, filtered water, whipping in a bowl, boil in water bath until all are combined and then let cool.
Step 2: Sift flour, baking powder into the above mixture and mix well, cover, then place in the refrigerator for about an hour.
Step 3: Roll out the dough to 3-5 mm thin.
Step 4: Shape with cutter, bake at 170-180 degrees Celsius for 10-12 minutes.
2. Prepare the decoration layer
200g fine sugar
40 g egg whites
A few drops of lemon
Vanilla essence (if desired)
Step 1: Put the ingredients into the bowl, beat with the machine at the highest speed until the whites are stiff, forming a sharp peak, standing.
Step 2: You take out a bit in the mixture mixed with water, if you want to be thinner, the large background icing must be thinner than the part used to draw small details.
Note: You should use gel color.
Step 3: After painting, you dry at a temperature of 60-80 degrees Celsius until the details are completely dry and harden.

I often make bento cake with Hong Kong gato cake to make the finished product soft, smooth and melt in the mouth. To blend in with the Christmas atmosphere, I slightly changed the cake core into cocoa and coffee flavors.
4 chicken eggs
52 g flour number 8
40g corn flour
8 g cocoa powder
30 ml milk
30 ml coffee water
48 ml cooking oil
Step 1: Separate the egg whites in 2 different bowls.
In the bowl of yolks, add milk, coffee, and cooking oil in turn, stir with a silicon spatula, and then sift flour, cornstarch, and cocoa powder. Then, continue to mix gently until the mixture is completely combined.
In the bowl of whites, add some lemon juice, vinegar, and whipped tartar using the fold . technique (Use a spatula to sweep the mixture from bottom to top to mix without breaking air bubbles).
Step 2: Put 1/3 of the whites into the yolk bowl, then add the remaining number and fold gently until the mixture is mixed, then put in a 160 degree Celsius oven for 45-60 minutes.
Step 4: Wait for the cake to cool, decorate with cream topping.
Note: You should use gel or syrup color so that the ice cream is not liquid, making it difficult to shape.
Huong Ly (Hai Phong)
I make cupcakes according to a basic recipe and decorate them with hand-painted sugar (aka fondant sugar).
For the cake core, you can apply the bento cake recipe above but bake at a temperature reduced by about 20 degrees Celsius and shorten the time. Cupcake is much smaller than the cake core, too high heat is easy to dry.
Housewives can be creative and decorate the top of the cake according to the following instructions.
Fondant sugar (this is quite common, you can find it at bakeries)
Brush pen size 000 (smallest) and size 0
Round cutter mold of many sizes
Step 1: You roll out the fondant layer about 2-3 mm, then use a cutter with a diameter of about 6 cm to press and take out 3 pieces.
Step 2: Roll another layer of fondant to draw shapes.
Samples you can refer to on the Internet. Beginners should choose simple, easy-to-follow patterns and draw basic strokes on fondant.
Step 3: Mix food color so that it is closest to the sample color. I used the 0 brush to paint according to the pattern and the 000 brush (smallest) to draw black or brown outlines for a sharper look.
Step 4: Use a sharp knife to make a sharp incision along the drawn line to get the desired shape. You let it dry for about 3 hours, put it on the round fondant that has just been cut from the cutter.
If you don’t want to make cupcakes, you can put the fondant you just drew in the bag and tie a bow to have a lovely Christmas gift.
